Fridge Raider Green Curry and Rice aka c.1999 on a Thai Beach

This was a fridge raiding meal the day before the shopping arrived, so strictly speaking it’s not a ‘green curry’ proper… but for me it has enough of the elements to make it as good as!  And if you close your eyes and put on Moby’s ‘Play’ album then you’re in Thailand c.1999! Holy Guacamole…! The Recipe for immortality…

I have the recipe for immortality.  This is it, and its scientifically proven in that so far I am immortal.  Things could change of course, but I’m going to be kind and share it with you, just to give you all a chance.  And, if the immortality thing turns out well, we’ll all be in it!  Immortality aside for a second, this is a dip packed with nutrients, and ingredients which are rich in healthy fats, vitamins, minerals and, according to this article, anti-cancer compounds.  So as it turns out immortality isn’t such a tall order after all, maybe? Enjoy it on Toast! Coconut, Sweet Potato & Ginger Soup with Pearl Barley aka ‘Souperb’ (because it is)!

I’m so pleased with ‘souper’ that I’m submitting it to ‘No Croutons Required’ hosted by Lisa’s Kitchen and Tinned Tomatoes which are fab sites to check out for vegetarian recipes! Here’s a casual weeknight night supper, or should I say ‘souper’!  (sorrynotsorry).  Today has been cold.  It’s the first day this Autumn that I’ve got our winter coats out, and I’ll shortly be transitioning from wellies to country boots (againsorrynotsorry)… Because lets face it, winter isn’t winter without feather down and sheepskin (unless you’re not me of course in which case propersorry) Winter wardrobes aside I’m hoping to redeem myself with ‘Souper’ because it’s ‘Souperb’.  The idea of soup for me is heartwarming metaphorically speaking, and this soup literally is heart warming (according to Live Strong) as well as just plain warming in a standard, non-blog speaking sort of soup eating way.  So enjoy it if you’ve been out in the cold, or have a cold… And although this is hearty enough alone, if you’re still hankering for croutons serve it with Sourdough if that …

Coconut Chicken & Cashew Nuts with Qunioa (starch me up with rice and I’m good too)

This dish has become a regular on the dinner scene in our house.  It originally came from health recipe by Lisa Richards from her anti-candida diet.  OK, don’t stop reading yet!  It’s full of anti-inflammatory turmeric and anti-fungal ginger & garlic.  It’s such a good cleansing meal, if that’s what you’re in the market for… Health benefits aside it’s a delicious Asian inspired good old spicy chicken and cashew nut recipe… The addition of cashews is ours, and I’m pretty sure they’d go against the Lisa Richards rules, but frankly, I like it better this way!  It’s quick too, around 25 minutes, so here goes: Ingredients (for 2): 2 tbsp olive oil or coconut oil 1 onion 2 cloves garlic grated thumb of ginger 1tsp red chilli flakes or 1 fresh red chilli 2 chicken breasts 1 can coconut milk 2 tsps turmeric 3 cavalo nero leaves or other green veg 2 handfuls raw cashew nuts 1 cup quinoa Handful fresh coriander Method: 1.
