Peach, Pea & Halloumi Salad

What did the cheese say when it looked in the mirror?  “Hallou-mi!” This salad though, it’s no joke.  In fact it’s seriously lovely… It’s about as easy as dinner comes too, so when you’re ready for a super summer supper and a glass of cold white wine this is for you… Full of allotment bounty and wholefood nourishment… If you’re not buzzing with vitality (and a sense of virtuousness) afterwards then… well, pop to a yoga class instead!! Ingredients (serves 2): A bed of mixed watercress, spinach and rocked (around 2 large handfuls) 2 good handfuls of fresh, shelled, green peas 4 roast new potatoes (halved or quartered depending on their size) 2 handfuls steamed green beans 2 flat peaches, cubed 6 slices halloumi 1 beetroot, cubed 1 tbsp olive oil, 1tbsp lemon juice 1 tbsp agave nectar 1 sprig fresh rosemary Sea Salt Pepper Method: 1) Pre-heat the oven to 180C.  Cut the potatoes and beetroot in to halves or quarters, drizzle with olive oil and a pinch of sea-salt, add a sprig of …

Thai Green Salad & Prawns

I love prawns, and I think prawns love chillies, garlic and ginger… This is a bit of a salad inspired by a Thai green curry (with prawns).  Really it’s me wanting another curry but thinking I ought to have a salad instead… You see I’d eat a curry in one form or another every day very happily!  So this is as far as as I can push a salad in the direction of a Thai curry!  Of course you could go so far as to serve a side of spring rolls with it… By the way, did you know avocado jokes were a thing?  The avocado link will take you to a few pictures which made me giggle! Chicken Schnitzel & Sauerkraut Salad

Chicken Schnitzel and Sauerkraut are definitely soulmates…  Each stands alone, but together they are a power couple of deliciousness.  There’s a reason that they’re a classic combination and even if you think you don’t like one, the chances are, that together you’ll love them… The Schnitzel-Sauerkrauts. Ingredients (Serves 2): 2 free-range organic chicken breasts 2 large handfuls of breadcrumbs 2 eggs Sprinkling of plain flour 2 large handfuls of watercress 1 avocado 2 handfuls toasted pinenuts 4 heaped tbsp sauerkraut 2 tbsp olive oil Method: 1. Heat the olive oil in a pan on the hob.  Beat the egg in to a wide bowl and have the breadcrumbs ready in another bowl close by. 2. Slice the chicken breast open length-ways (along the natural division of the meat). 2. Cover with cling film and bash until flat with a rolling pin.  The chicken breast will almost double in size… 3. Cumin Roast Chickpeas & Brutus fighting Popeye Salad “Give him the Twister Punch Popeye”

I love chickpeas… my kids love chickpeas and I use a lot of them. It’s minor panic time if there aren’t chickpeas in the house!  Oooo they’re just little pods of hearty nourishment, and they’re so versatile!  Apart from houmous, which I keep a vat of in the fridge always, They make a great soup and really beef up a salad too… We had this salad with our Harissa Roast Chicken, but it stands alone as a quick, healthy lunch too…Iron rich, great for the blood and full of vitamins says BBC Good Food. Scroll down for a classic Popeye moment… Ingredients (serves 4 as a side or 1-2 for lunch): 1 can chickpeas (drained) 1/2 bag baby spinach Juice 1/2 lemon 1 tbsp extra virgin olive oil Salt & pepper Generous pinch of cumin Method: 1. Chilli Chicken Bestival Kebabs

So Tim spent last weekend at Bestival on the Isle of Wight… And amongst yoga, live music, DJs, Henna Tattoos and Ping Pong, there was food… Festival fuel!  Sadly I wasn’t there to experience it… But I did get a little flavour of the festival on Thursday night when Tim put together these ‘a little bit delicious’ (to borrow a phrase from our little one) Chilli Chicken Kebabs… My mouth is watering writing this up… Let us know how you get on with these because really they are a taste sensation!   Ingredients for 2 kebabs: at at the end you’ll need a spread of Houmous… Ingrdients for the wrap: 250g Wholemeal spelt flour 100ml warm water 2 tbsp rapeseed oil salt pepper 1tsp ground coriander Method for the wrap: 1. mix together the ingredients adding the water slowly.
