Pink Potato, Fennel & Leek Soup

The temperature has dropped again and it seems like everyone is poorly… Mine included.  So we’re bundled up with sniffs and snivels and only hot soup and toast will do.  That along with chamomile tea and ginger biscuits!  No problem though, snuggling on the sofa and reading back to back Roald Dahl is a treat… We’re on ‘Danny the Champion of the World’… so gripping…The link to the site here is great too, lots of lovely interactive Roald Dahl quizzes, recipes and ideals for entertaining kids… So back to the soup.  Leek and Potato is always a favourite, but I had a bag of ‘Red Emmelie’ heritage potatoes delivered this week  from our good friends at Abel & Cole and they’re delicious.  They’ve also given this soup its lovely pink colour… It’s sweet and hearty and full of vegetable goodness!  I hope you enjoy it as much as us! Golden Beetroot Soup with Maple Roast Walnuts & Feta…

This one was a surprise to me!  Sweet, earthy goodness from the king of vegetables… The mighty, hearty, just plain delicious beetroot.  Can you tell I’m a fan? Mighty Minestrone & Other Winter Warmers

In the thick of this cold snap, bundled up in chunky knitwear and just as I was gloating that I haven’t been ill since I can’t remember, it hit me.  The worst cold virus I’ve had since I can’t remember… hot & cold, aching all over, 3 days on the sofa and counting and most distressing (for me not my family), I’ve lost my voice, totally.  No sound, just whispers.  Actually I think my family are probably quietly relieved!!  So this is a recipe I meant to post a good few days ago, spurred on by Nigel over at The Hersham Hub and his request for winter warmer recipes…   Ingredients: 1 red onion 2 cloves crushed garlic 2 small leafy celery stalks 2 green chillis 1 courgette 1 pointed red pepper 1 sprig rosemary 2 tsp paprika 1 tsp mixed herbs 1 tsp vegetable bouillon 1/2 glass red wine 25g fresh basil 2 tins plum tomatoes 1 tin mixed beans 1/2 cup orzo (pasta) 20g butter 2 tbsp olive oil Method:   1. Spicy Red Lentil & Cannellini Bean Soup & Soda Bread

Rustic, warming, hearty and nourishing… this is a true peasant’s supper!  I had a hankering for soda bread earlier but don’t usually have buttermilk at home so this one was made with yoghurt instead.  In fact it could be made with sour milk too (so don’t ever throw it out if you have it, bring it round… or make soda bread!).  Soda bread is really rewarding, it takes about 5 minutes to combine the ingredients, and 50 minutes to cook, so as long as you’re home you’ll have a tasty loaf in under an hour which requires zero skill but looks pro!  The soup here came about after seeing a tasty looking ham hock soup on instagram.  Not being much of a ham hock soup fan, I appreciated the chunky look and thought yes!  A chunky soup and soda bread supper… Yum!  That’s what I though… and here it is! Broccoli, Stilton & Walnut Soup

Going back to the fairy garden visuals of yesterday’s brussels sprouts post, if the brussels sprouts are the cabbages, then the broccoli would be the trees.  But I’d give them little super hero capes because broccoli is super…Especially sprouting broccoli.  Perhaps this is a project for a rainy day…?!  Or perhaps I have too much time on my hands… Either way, this soup is a little bit delicious.  The only ingredients here are the broccoli, Stilton & walnuts, and that’s because I’ve used a bone broth to soup them up… and there’s so much flavour and seasoning already there that no more is needed.  If you’re without a bone broth though, I’ll list a vegetable base alternative. Ingredients: 1 head broccoli 100g stilton 2 handfuls chopped walnuts Covered with chicken bone broth (about 600ml) or topped up with vegetable stock. If you don’t have any chicken bone broth then you can make a vegetable stock base from the following ingredients: 2 tbsps olive oil 1 onion, chopped 1 carrot, chopped into small cubes 1 stick …

Halloween Pumpkin Soup with Sourdough Cheddar Croutons

The allotment is getting sleepy… and it’s also getting cold.  It’s hot dogs on the fire and hot chocolate to keep our hands warm while we’re there from now on!  The last of the harvest bounty has come in… and we’ve finally collected the gnarly old pumpkins ready for halloween and ready for pumpkin soup… So here’s the first halloween pumpkin recipe of the season! Ingredients for the soup (serves 4): 1 tbsp butter 1 tbsp olive oil 1 red onion, chopped 1 large clove garlic, crushed 1 large carrot, chopped 2 sticks celery 10 fresh sage leaves, chopped salt & pepper 2 bay leaves 2lbs pumpkin flesh, chopped into bite sized (or slightly larger) chunks 800mls boiling water (1 tsp vegetable stock dissolved) 100mls white wine For the croutons: 250g stale or day old sourdough bread 50g organic cheddar 3 tbsp olive oil Method: 1. Coconut, Sweet Potato & Ginger Soup with Pearl Barley aka ‘Souperb’ (because it is)!

I’m so pleased with ‘souper’ that I’m submitting it to ‘No Croutons Required’ hosted by Lisa’s Kitchen and Tinned Tomatoes which are fab sites to check out for vegetarian recipes! Here’s a casual weeknight night supper, or should I say ‘souper’!  (sorrynotsorry).  Today has been cold.  It’s the first day this Autumn that I’ve got our winter coats out, and I’ll shortly be transitioning from wellies to country boots (againsorrynotsorry)… Because lets face it, winter isn’t winter without feather down and sheepskin (unless you’re not me of course in which case propersorry) Winter wardrobes aside I’m hoping to redeem myself with ‘Souper’ because it’s ‘Souperb’.  The idea of soup for me is heartwarming metaphorically speaking, and this soup literally is heart warming (according to Live Strong) as well as just plain warming in a standard, non-blog speaking sort of soup eating way.  So enjoy it if you’ve been out in the cold, or have a cold… And although this is hearty enough alone, if you’re still hankering for croutons serve it with Sourdough if that …
