Retro Rhubarb and Ginger Compote

When I think of rhubarb I think of ‘Roobarb and Custard’ the 1970’s kids TV show, or Rhubarb and Custard penny sweets, or endless Rhubarb crumbles every Sunday through the summer…  I’m never very sure whether Rhubarb is a vegetable or a fruit and I’m always slightly panicked as to what to do with it.  However, when in doubt, compote.  The main reasons I love a compote are that it reduces the volume, it stores well in the fridge and it can be added to just about any pudding or breakfast.  Mixed with yoghurt, added to smoothies, dolloped on top of granola or porridge or mixed with ice-cream. Ingredients: 5 sticks of Rhubarb 1 Thumb of ginger 2 Tbsp Maple Syrup A little water Method: 1) Top and tail the rhubarb to remove any scraggly bits.  Cut in to approximate 1cm chunks. 2) Add the rhubarb to a saucepan on the hob with a splash of water and the maple syrup.  Heat and simmer, add a tbsp of water at a time if the compote …

Wild about Garlic (that’s Wild Garlic)…Recipe Share…

If you go down to the woods today, and follow your nose along the river bank, you might notice the pungent smell of wild garlic wafting through the air.  You’ll see it in all it’s woodland growing green glory, carpeting the banks of the river Mole, deep in the woods…  It’s a fairy-tale food, and it’s free!  It’s coming in to season now and it’s so worth hunting down…  So if you’re out walking or feel like an adventure, keep your noses peeled and collect the green leaves (not the bulbs) for use as you would any seasonal herb or garlic!  The flowers are edible too, but as with any herb, it’s most pungent, tender and tasty just before it flowers.  Not only that it’s quite literally a superhero amongst foods. Pink Potato, Fennel & Leek Soup

The temperature has dropped again and it seems like everyone is poorly… Mine included.  So we’re bundled up with sniffs and snivels and only hot soup and toast will do.  That along with chamomile tea and ginger biscuits!  No problem though, snuggling on the sofa and reading back to back Roald Dahl is a treat… We’re on ‘Danny the Champion of the World’… so gripping…The link to the site here is great too, lots of lovely interactive Roald Dahl quizzes, recipes and ideals for entertaining kids… So back to the soup.  Leek and Potato is always a favourite, but I had a bag of ‘Red Emmelie’ heritage potatoes delivered this week  from our good friends at Abel & Cole and they’re delicious.  They’ve also given this soup its lovely pink colour… It’s sweet and hearty and full of vegetable goodness!  I hope you enjoy it as much as us! Golden Beetroot Soup with Maple Roast Walnuts & Feta…

This one was a surprise to me!  Sweet, earthy goodness from the king of vegetables… The mighty, hearty, just plain delicious beetroot.  Can you tell I’m a fan? (Click here for ‘A Beetroot Affair to Remember’) I had a bag of beetroot in my latest veg box delivery, and in that bag was a golden beetroot almost the size of a swede… I pondered what to do?  A slaw?  Hide it in the kid’s mash?  Crisps?  Roast?  Actually any of those things would have been lovely, but today I panicked and decided it had to be eaten, and for lack of inspiration at 5pm today between beaver pick up (that’s scouts for 7 year olds for the sake of my transatlantic friends) and the dog escaping down the street (again) I souped it.  Plain and simple.  And actually I was more than pleasantly surprised with the result.  It’s smooth, sweet, a little earth and so so moreish…  Tim of course has had to make a side of eggy-bread to go with his (vegetables not being …

Papaya & Coconut Porridge

It’s a tropical winter warmer… Sweet & fruity, but wonderfully warming on a cold winter’s morning… Porridge sets me up until lunch, providing there’s enough protein in it.  I definitely couldn’t get by on oats and milk, but the addition of coconut milk, and or nuts and seeds keeps me going.  I absolutely love that warming feeling it gives too, like being heated from the inside out…     Ingredients (serves 1): 1 handful oats 1/2 large papaya 1 tbsp chia seeds 1/2 can coconut milk Almond milk to top Method: 1. Put the oats and chia seeds in a pan on the hob.  Halve a papaya and remove the seeds.  Score length-ways and width-ways to create cubes, then scoop them out with a spoon in to the pan. 2. Top up with coconut milk and almond milk and heat for around 5 minutes to a gentle simmer.  Add more almond milk if the porridge is too thick. 2. Mighty Minestrone & Other Winter Warmers

In the thick of this cold snap, bundled up in chunky knitwear and just as I was gloating that I haven’t been ill since I can’t remember, it hit me.  The worst cold virus I’ve had since I can’t remember… hot & cold, aching all over, 3 days on the sofa and counting and most distressing (for me not my family), I’ve lost my voice, totally.  No sound, just whispers.  Actually I think my family are probably quietly relieved!!  So this is a recipe I meant to post a good few days ago, spurred on by Nigel over at The Hersham Hub and his request for winter warmer recipes…   Ingredients: 1 red onion 2 cloves crushed garlic 2 small leafy celery stalks 2 green chillis 1 courgette 1 pointed red pepper 1 sprig rosemary 2 tsp paprika 1 tsp mixed herbs 1 tsp vegetable bouillon 1/2 glass red wine 25g fresh basil 2 tins plum tomatoes 1 tin mixed beans 1/2 cup orzo (pasta) 20g butter 2 tbsp olive oil Method:   1. Spinach & Red Lentil Chilli, Guac & Coriander Cashew Cream with Baked Sweet Potato

This is a feel good supper.  It’s filling and hearty without being bloaty and guilty!  I’ve been reading a brilliant book recently called ‘Gut’ by Giulia Enders, its really accessible for unsciency types like me, and really insightful when it comes to understanding how we digest food, how long it takes and what a powerful, totally underrated organ the gut is.  It turns out that if we feed our gut bacteria well and give it enough time and space to give itself a good clean, we can powerfully influence our state of mind, health and well-being.  Food is more than fuel, it’s the very building blocks of our being.  I can’t recommend the book highly enough, and if you’re not convinced here’s a video of Giulia talking about the book.   So back to the gut friendly recipe!  Putting these ingredients together was originally inspired by Deliciously Ella’s Mexican Quinoa Bowl which is a recipe worth checking out.  Although, chilli’s been part of our repertoire since I can remember, the addition of the cashew cream …

Cranberry, Orange and Cinnamon Compote

It’s beginning to look (and smell) a lot like Christmas!  Tim’s at the supermarket now, doing the ‘big shop’ and I’ve been busy in the kitchen… There’s Sauerkraut fermenting, fresh bread baked and I’m enjoying a cup of chamomile and honey tea as I write this.  It’s blowing a gale outside but it’s warm in here… and cosy and smells like cranberry, orange & cinnamon compote!  I’m going to dollop this on my yoghurt in the morning, but there will also be plenty for the turkey on Friday! Ingredients: 200g Cranberries (fresh or frozen) Juice of 2 Satsumas 1 stick cinnamon 5 cardamom pods 3 tbsp Maple Syrup Method: 1. Put the cranberries in a pan on the hob and heat.  Add the Satsuma juice, cinnamon, cardamom pods and Maple syrup.  Bring to the boil and lower the heat to a simmer. 2. Allow the liquid to reduce and add a little extra water. 3.  Allow the water to reduce and add a little more. 4. Simmer for around 15 minutes before removing from the …

Rich Chocolate, Cardamom Tarts

“Three, more sleeps”… said my children on the way to bed tonight.  They’re so excited, I’m so excited, we’re all so excited!  We’re officially on holiday!  Fairy lights are blinking everywhere we look, food and drink is stacking up in every conceivable corner along with paper napkins, socks and sneaky chocolate wrappers…  The dog has only pulled the tree down once and luckily hasn’t eaten enough chocolate to make herself really sick.  So far so good…  Any moments of real stress are countered by a quick visit to the fridge for another chocolate tart or perhaps a glass of 4pm wine.  Welcome to Christmas… Ingredients for the tart case (makes 12): 250g plain flour 125g diced butter (or coconut oil for a vegan alternative) 2 tbsp cocoa powder 2 tbsp icing sugar 6 tbsp cold (or iced cold) water Ingredients for the Chocolate Cardamom Filling: 170g dark 70% chocolate 160g coconut cream 10 cardamom pods (seeds crushed) Stardust, or edible glitter to serve… Method: 1.
